At a high level, the candy is frozen and then placed in a vacuum environment where the ice inside it is removed through a process called sublimation. Instead of melting into liquid, the frozen water skips that step and turns directly into vapor.

We’ll hand out samples of freeze-dried Jolly Ranchers that have been cut in half. What used to be a small piece of candy has now puffed up to about the size of a ping pong ball.

Every time, their eyes get big. There’s this pause while they try to figure out what just happened. Then they look at their parents with that “can we please get this?” look.
